Creamy Cold Tomato Soup
This healthy recipe will keep you cool and grounded in the summer heat. It will promote clarity to manifest your dreams.
Serves 5
10 minutes prep time, 3-4 hours chill time.
~Easy~
1 cucumber, chopped
1 scallion, chopped
1 clove garlic
4 cups tomato juice, unsalted
1 red or green pepper, chopped
½ tsp. oregano
1 cup plain yogurt
Sliced mushrooms or tomato chunks for garnish
Salt and pepper
Combine all ingredients (except yogurt) in small amounts in a blender and blend until smooth. Whisk in yogurt. Chill several hours before serving and garnish as desired with mushrooms or tomato. Add salt and pepper to taste.
